What is a cappuccino, a macchiato, a latte, a brevé or an Americano? One problem is that no recipe is universal to every coffee shop. Different cafés inevitably make their own variations of standard drinks. But those variations should be relatively minor in difference.
Here’s a partial laundry list of the most popular espresso-based coffee drinks you are likely to find in most coffee shops. You will see most of these drinks contain two main ingredients — espresso and some form of milk. It is mostly in how the milk is prepared that differentiates one drink from another.
Espresso:
The foundation of all espresso-based drinks, as well as a drink unto itself, espresso is a small dose (generally 1 to 2 ounces) of concentrated coffee, hopefully containing all of the good and tasty elements of the coffee bean while leaving the less desirable qualities, such as bitterness, behind. Proper espresso preparation involves grinding and extracting the coffee fresh for each and every drink.
Latté:
Espresso with milk steamed to about 150 or 155 degrees. Some people will ask for an “extra hot” latté, but the milk should be steamed no higher than 170 degrees or it will scald and ruin the flavor of the drink. The milk in a latté also may be very slightly foamed as well as steamed. A latté made with steamed milk only is sometimes called a Flat White. This is the drink that is most often the foundation for all of those sweet, flavored drinks that use syrups or sauces like hazelnut, caramel or chocolate.
Cappuccino:
Espresso with milk that is both steamed and foamed, making a creamier and somewhat sweeter drink than a latté. A cappuccino is not the powdered drink that comes out of a gas station coffee machine. A real cappuccino requires a level of skill and attention in properly preparing the milk that can only be accomplished by a human being, so far. There are fully automatic espresso machines out there that purport to steam and foam milk properly for a cappuccino, but I do not think they have yet achieved the same quality of product as a good barista.
